About the Farmer

Diego Bermudez is internationally renowned for his revolutionary processing methods, resulting in some of the most spectacular coffees we have tasted so far.
This Colombian producer has dedicated the past 13 years of his life to the in-depth study of the most complex coffee processing techniques known today. He has won several awards due to his extensive experimentation in non-traditional fermentation methods. His coffees have reached record prices in auctions.

Villa Rosita is located in the municipality of Piendamó, in the village of Tunía, Los Arados.
The variety of this coffee is named Castillo, after the researcher Jamie Castillo, who helped develop the varietal for Cenicafe; Colombia’s coffee research center, after 23 years of research and development.
It is currently the most planted coffee variety in Colombia; well-known for its resistance to leaf rust, its smoothness in mouthfeel, aroma, and citric acidity.
Hand-picked Castillo cherries of the highest quality are processed using methods developed by Bermudez, resulting in SCA grading scores of 90+.
This Bermudez coffee was processed using “The Lychee Process”:

The whole cherries are first fermented anaerobically for 48 hours in tanks with a valve at 18°c.
The cherries are then pulped and anaerobically fermented in mucilage for 96 hours at 18°c.
They are then double washed with thermal shock, first at 40°c and then 12°c, before being control dried for 34 hours at 35°c and relative humidity of 25%, until the beans reach a moisture content of 10-11%.
The beans are dried with condensation, using recirculated air from a drying machine called Eco-Enigma, developed and patented by Bermudez.
