About the Farmer

Alexandre Emerich, the owner of Sítio Bela Vista, takes care of the whole process closely. He migrated to the field at a young age, bought land, started planting coffee. Alexandre is always searching for new methods of natural fermentation, in order, to develop unique flavors. He is a Q Grader that always helps local farmers to understand and grow specialty coffee. He is a reference in the region of Caparaó.

Sítio Bela Vista is located in the Serra do Caparaó mountain range in Minas Gerais, where coffee is growing from 900m to 1,300m. The altitude is important because it favors the planting of specialty coffee and allows for mild temperatures in summer and cold in winter. Cold temperatures at harvest time cause the fruit to ripen slower due to a lack of rain, making the plant in a state of suffering. The plant suffers from the lack of water and to protect the cherry sending all nutrients to the fruit, making it sweeter.

After reaping during the harvest just the red cherries the coffee is placed on a dry pool where the fermentation will take place. There the coffee will stay with no light and with just a bit of oxygen till reaching the temperature of 35 C. After the cherries are spread through the patio in order to start the dry process that will take 12 days. Due to a high concentration of sugar in the cherries, the coffee will pass through a natural fermentation process bringing extremely sweet flavors such as banana and chocolate.
