About the Farmer

Don Claudio began his adventure in the production of specialty coffee after completing training in agricultural practices at Cafeologia in San Cristobal de las Casas.
After completing the training, he was able to improve his production practices and processing techniques in his plantation.
He and his three children work together with a passion to transform specialty coffee by developing new coffee varieties with greater cup profiles and refining their processing methods.
Jesus Salazar of Cafeologo, the sourcing partner, works with local producers to create the highest quality coffee possible. First, the farmers are asked how much they require for living costs a year, then a quality plan is created with the goal of delivering coffee worthy of this amount. They offer many services such as a coffee shop, a hotel, a quality laboratory, a cupping room, a roastery, a warehouse, and a beneficio, plus Jesus brings his expertise directly to the farmers to increase quality products and practices.

This delicious coffee, grown by Don Claudio, is not certified but is produced on the model of organic farming, as are most of the coffees in Jesus Salazar's project; Cafeologo.
Developed in 2010 in Chiapas; Cafeologo involves Mayan coffee-producing communities.
Jesus works directly with 140 micro-producers from the area, growing amazing quality coffee shaded by the Primary Chiapas forest. Each farmer only produces about 20 bags a year.
A one-hour drive around the area of San Cristobal demonstrates the incredible diversity of aromatic profiles.
We are overjoyed to be able to bring this Mexican deliciousness to Portugal!
