About the Origin
This coffee is cultivated in the Deri Kebele area and processed at Ephtah’s dry station in Deri, Guji. The station spans 2.8 hectares and is located at 2,300 meters above sea level, with 200 drying beds. The coffee is sourced from smallholder farmers who grow heirloom varieties near the station. These heirloom coffees are unique to Ethiopia, with some being wild regional landraces and others developed by the Jimma Agricultural Research Center (JARC). Farmers deliver the ripe cherries to the station, where they are naturally processed by drying the cherries with their skin and mucilage still attached.
The coffee is sun-dried for 13 to 16 days until it reaches the ideal moisture content, creating a sweet and fruity cup profile. With a score of over 84.5, this coffee offers tasting notes of peach, mandarin, cherry, and vanilla. Grown at altitudes between 2,150 and 2,300 meters, the coffee benefits from the region's red clay soil, annual rainfall of 1,200 to 1,599 mm, and temperatures ranging from 13 to 25°C.
