About the Origin
Grown by small producers in the Jaltenango and Villacorzo regions of Chiapas, Mexico. Farms average 1.5 hectares and benefit from the region’s volcanic soil, humid microclimates, and ideal rainfall patterns. This area is widely regarded as one of the best for high-grown specialty coffee in Mexico.
Washed and sun-dried. Smallholder farmers hand-pulp and ferment the coffee in small tanks before drying. Grown at elevations of 1,100–1,500 masl. Varietals include Bourbon, Typica, Caturra, and Catuai.
