Carmo de Minas, Brazil

A smooth, sweet Brazilian natural from Fazenda Sertão, in the hills of Carmo de Minas. Yellow Bourbon, Catuaí and Catucaí grown between 1,100 and 1,450 m and dried whole in the cherry, for a cup of chocolate and sweet fruit with a gentle acidity and a round, comforting body.

The history of Fazenda Sertão runs alongside the first steps of coffee growing in Carmo de Minas. José Isidro Pereira was born into one of the first generation of coffee-growing families in the region. He grew up, studied dentistry and left — then came back when his mother died and the farm passed to him as her only heir. Today his wife Nazareth, their children and their grandchildren look after Fazenda Sertão. This lot is picked ripe and dried whole in the cherry, the natural process that gives it its chocolate, its sweet fruit and its smooth body.

About the Region

Carmo de Minas sits in the south of Minas Gerais, high enough for coffee to ripen slowly and cool enough that winter frost is a real risk. Fazenda Sertão answers that with geography: 330 hectares planted on the tops of the hillsides, on slopes reaching 50%, where the cold air drains away instead of settling on the trees. The same exposure ripens the cherries evenly and keeps the canopy dry enough to hold fungal disease back. Altitudes run from 1,100 to 1,450 metres and the year averages 18 °C — the conditions behind the dense, sweet beans this farm is known for.
