About the Region

Located on the western slopes of the Colombian Andes, Inzá is part of the Tierradentro region—a land of dramatic landscapes and deep cultural roots. Approximately 80% of the local population belongs to the Paeces indigenous tribe, who have farmed these mountains for generations.

The region is defined by its high-altitude peaks (1,700–2,000m) and nutrient-dense volcanic ash soil. These conditions, combined with a steady cool climate (16–22°C), result in a slow maturation of the coffee cherry, concentrating the sugars and complex acids that Cauca is famous for.

About the Coffee

This coffee is a 100% Caturra, a natural mutation of Red Bourbon known for its vibrant quality. While many Colombian producers stick to washed methods, these farmers have been pioneers of the natural process since 2019.

The "El Indio" profile is achieved through meticulous drying management:

  • Meticulous Sun-Drying: The finest cherries are spread across raised beds and concrete patios.
  • Precision Monitoring: To ensure a clean cup without over-fermentation, the drying cherries are inspected and turned four times daily by a dedicated quality control team.
  • Technical Mastery: Today, these farming families have mastered the craft to the point where 80% of their annual harvest is now successfully processed as high-scoring naturals.
