About the Region

Located at an average of 1,700 m.a.s.l., Popayán sits in a high-altitude plateau sheltered by the towering Andes mountain range. This unique geography creates a "climatic pocket" with incredibly consistent temperatures (16–22°C) and nutrient-dense volcanic ash soil.

We work with a dedicated group of approximately 75 growers in this region. Through our long-term partnership program, these farmers receive premiums of up to 20% above market price, incentivizing the meticulous harvesting required to produce an 85+ score coffee.

About the Coffee

This decaf isn't just an afterthought; it’s a selection of the finest Colombia, Castillo, and Caturra varieties. After being washed and dried on raised beds for 5–7 days, the green beans undergo a natural decaffeination process that actually enhances the coffee’s inherent sweetness.

The Sugar Cane (EA) Process:

  • Natural Extraction: Using a derivative of local sugar cane (Ethyl Acetate) and mountain spring water, the caffeine is gently dissolved over 8 hours.
  • Flavor Preservation: Unlike chemical-heavy methods, this "natural" process avoids high pressure and extreme heat, protecting the bean’s cellular structure.
  • The Result: A coffee that tastes like coffee. The sugar cane process leaves the fruity, floral, and chocolatey attributes fully intact while removing 99.9% of the caffeine.
