Imagine summer in a cup. This coffee is naturally sweet, vibrant, and irresistibly fragrant. The cup bursts with the distinct flavor of stone fruit, highlighted by prominent notes of ripe peaches and nectarines.

These bright, fruity elements are beautifully anchored by rich cacao nibs and a zesty hint of lime. Because it is crafted from the Castillo variety, the underlying profile also delivers a smooth body, bright acidity, and subtle, complementary hints of citrus, red fruits, and caramel.

Cultivated by producer Jairo Arcila at the Santa Mónica farm , this coffee thrives in the lush, mountainous landscapes of Armenia, Quindio.

The coffee plants draw their nutrients from the region's rich volcanic ash soils. Growing in an ideal environment with warm temperatures and generous rainfall, this vibrant setting provides everything the coffee needs to develop its extraordinary flavor profile.

About the Coffee

This unique lot showcases the Castillo variety, a resilient Colombian plant developed to combine disease resistance with an exceptional cup profile. The journey of this coffee begins by hand-selecting only the absolute ripest cherries to ensure peak sweetness.

What makes this coffee truly remarkable is its experimental "Washed + Peach" process. The cherries undergo a dry anaerobic fermentation where real peaches are added directly to the mix. As the peaches gently break down, they release natural esters and alcohols that interact with the coffee mucilage, infusing the beans with incredible depth and complexity.

After fermentation, the coffee is thoroughly washed using an eco-friendly green filtration system that purifies the wastewater. Finally, the beans are spread out on drying stations and carefully turned by hand to dry evenly under the sun.
